The latency is dependent primarily on the audio interface settings:
The lower the buffer settings, the less latency you get. You
can easily test this on your 828 using AudioDesk. However,
the lower the buffer setting, the more CPU overhead audio processing
takes up. I think you can easily get below 10ms total latency
on an 828. I've used 828s for live processing for a couple years
on OS 9. I usually set the buffer size at 256 or 384 samples.

Hi,
Has anyone tried using an AU mixer live? How little latency can you
get?
I would like to build a live guitar rig around my MOTU 828-II, but the
unit does not have a convenient way to access its presets. I think
what I want to do would be a pretty straightforward use of the
MatrixMixer, but before I start out on all that coding, I'd like to
have some hope that it's going to be useable (on my 1.0 GHz
Powerbook). Besides, I think it would be way cool to have my
PowerBook's glowing apple on top of my rack!
What do you think, sirs?
Thanks,
Bill
