The Built-in Audio Units are listed and documented in AudioUnit/AUComponent.h. Furthermore, you should read all the AudioUnit headers (except for AudioUnit/AUNTComponent.h) to fully understand what is available and how to use it. There are some holes in the documentation, but you can always ask questions on list about them.
