You mean the Music tab of the QuickTime pref panel? It's used for
selecting the default DLS/Sound Font sample bank.
Yes, that's the UI I'm thinking of, and where users used to be able to
choose external MIDI.
From QuickTime help (Mac OS X 10.3.5, QT 6.5.2):
"QuickTime has a built-in synthesizer that it uses to play these files.
You can also have QuickTime use an external hardware synthesizer
instead of the built-in one.
To specify a different synthesizer, open System Preferences, click
QuickTime, click the Music tab, and select the synthesizer you want to
use. (In Windows, open the QuickTime Settings control panel, choose
Music, and select a synthesizer.) "
