Typically use of a sequencer is to record separate midi tracks for
each channel, and to play back the contents of each track using one
channel. This can also typically be overriden in most midi sequencers
so that multiple tracks can play back from a single channel. The idea
of forcing a single channel on each track is to more accurately
emulate a multitrack tape recorder and mixer, where the level and pan
for each part can be controlled separately. Editing of midi data
when it is all on one track is more difficult, since you need to
filter out the events that are on the other channels, which brings
you right back to the concept of tracks!
