MusicTrack vs. MIDI Channel

Hi,

Currently I am saving my multiple (3 piano, 1 drum track on ch10) channel MIDI input into one MusicTrack. And then I save this. It sounds fine in QuickTime. But when I add the MIDI file to GarageBand its mashed into one instrument (pop flute), rather than the 10 or so independent channels I recorded. Is this because they don't have a "Channel Message" message (to change instrument) at the start of the track for each channel? What is the difference between recording each channel on a separate track and recording all the channels into one track? Isn't the notion of channels enough to keep things separate?
