QT7 *should* be able to save metadata to MP3 files since iTunes just uses standard ID3 tags for MP3 files. I believe QT can read and write those tags with no problem (including in versions earlier than 7) but I am not a QuickTime engineer so I could be wrong on this.
The metadata format for iTunes AAC (.m4a/.m4p/.m4b) data is different and that is what is being referred to. A later version of QT will be able to write that format. In fact under Windows, it's not possible without getting a licence to use the AAC compression feature:
No, that just means you can't take an audio file of another format and convert it to AAC without getting a license. The metadata editing is a completely different issue.
