I've looked at scaudiocompress before. Good code. Useful stuff,
but no usage of AudioConverterFillComplexBuffer.
If you just change SCAudioFillBuffer to
AudioConverterFillComplexBuffer in scaudiocompress (and use
AudioConverter rather than scaudio component), it should work,
assuming no mix-down is involved. The SCAudio interface is exactly
the same as AudioConverter, so the code is still useful for
understanding how to use audio converter.

Do you mean m4a? Yes, use AudioFile api to read it. Look at the
scaudiocompress sample code (google it).
