Yes
For example, if I drop a surround-format WAVE or AIFF file (6
channel) in it, can I/should I set the output stream format of the
AU to a 6-channel output? Will that play all of the channels?
Yes - we've added some more features to this for Leopard, so that you
know what order the channels are in (AudioChannelLayout). In tiger it
will just be the order of the channels in the file
If there is a mismatch between the num channels in the file and the
output - channels will be dropped (or you will get silence) - it
doesn't do any mixing.

Or is the AU stereo output only (in terms of actual playback, not
in connection)?
