Max/MSP, Pure Data (Sometimes just called PD. Same as Max/MSP really), Reaktor,  Plogue Bidule. To a lesser degree: Reason. They all take slightly different paradigms towards a generic audio graph UI. IMO they all leave room for improvement too.
