Each device has two properties for describing the channelization prefs:
- kAudioDevicePropertyPreferredChannelsForStereo covers which two
channels on a multi-channel device should be used for left and right
stereo channels.
- kAudioDevicePropertyPreferredChannelLayout uses an
AudioChannelLayout struct to express the usage of each channel in a
surround sound context.

Thanks for the response.
But I seem to be able to do something like that via the 'speaker
configuration' section of the audio midi setup app. The drop down
sheet lets me choose a stream to 'bind' to the stereo speaker
layout. Is there an API to do this?

When you add a device to an aggregate, you have to add all the
streams. There is no support for just adding some of the streams.

I am trying to create an aggregate device using the core audio
APIs. I am using a device that supports multiple audio streams.
I want to assign just some of those streams to the aggregate.
Can this be done? What APIs do I use? Is there an example of
this somewhere that I've missed?
