Hi, I would like to take a sound file and speed it up (or slow down) in real time like a record deck. I'm presuming I would change the sample rate in real time?

If you don't care about the pitch changing (like with a record player or tape deck), then you can just change the sample rate. Otherwise you'd need to use something like the AUVarispeed (sp?) AudioUnit, which supports independently changing the speed and pitch.
