I know what you mean I've found audio the single most difficult area of OS X to learn and work with. Unfortunately there isn't really any reading material beyond what you can find in the online documentation; I have no idea why there are a bunch of Quartz graphics books but no CoreAudio books, but that's how it is.
If you have access to the WWDC 2008 attendee site, or to the iPhone Dev Center website, you have access to the new version of the Core Audio Overview document. It's dated 8 June 2008. This document, although still in progress, has a great deal of new introductory information.
