There cannot be a simple answer without also knowing the details of
your particular open source project, especially whether you plan to
redistribute the source. There is a distinction between using
Apple's example source in a closed project versus another open-source
project. It would take a lawyer to definitively respond to your
question, because it would require honoring all of the requirements
of Apple's license and all of the requirements of the open-source
license for your project. It's entirely possible that the licenses
would be mutually exclusive.
Your best bet is to study the Apple license, and then pick a license
for your open-source project which is completely compatible.
However, if you are combining code from multiple other other open-
source projects, then it may be very difficult to honor everyone's
license.
