What do you mean by "encoder"
Encoder for us is something like an AAC or MP3 encoder (and these
formats have nothing to do with audio units, but you do this with
audio codecs)

If you are making a stereo mix of a 5.1 stream, then no, an AU is
fine. Its just that AULab doesn't have the logic for routing the
signal to do this kind of mix down.
How about my second Q about channel configs/names?
I don't know why its not showing up in AULab if you publish this as
{6, 6} - that might be worthwhile for us to look into (so could you
file a bug and attach the AU - or at least the shell that would just
let us test this). I presume the AU gets past auval just fine?
for the channel labels - have a look at the AudioChannelLayout (and
Tag) support in AUBase - you could try running the reverb through
auval - it will give you some diagnostic stuff about what it supports
with surround that might help you get started with this
