Sound from scratch

Aloha all-
I'm not sure where to begin with this one, but I want to create some
music purely through code; no use of devices or instruments or
anything. That said, I don't want to to come out sounding like beeps
or bloops; I'd rather like to be able to play around with generating
sound like I can do with graphics programming.
That said, I have no idea where to start. I know *of* Core Audio, but
I'm not sure it can do what I want; I read through a bunch of the
intro documentation and it seems like I could write a program to
modify the inputs from an external source or existing file, but as I
said, there is no existing anything here.
I've done plenty of Obj-C programming with the other frameworks, so
there's no issue there; that said I've done exactly zero audio
programming so all I've got is a Mac, a compiler and a dream.
Might anyone be kind enough to point me in the right direction to start?
Thanks,
Ron
