Ron,
You should seriously look into the MusicKit - an ObjC framework from
the NEXTSTEP days. Rather than attempt to describe it, I will direct
you to the SourceForge site.

You might also look into Csound and Max/MSP.

I've done plenty of Obj-C programming with the other frameworks, so
there's no issue there; that said I've done exactly zero audio
programming so all I've got is a Mac, a compiler and a dream.
Might anyone be kind enough to point me in the right direction to start?
