You'll have to give more details. In general, you can use mixer AudioUnits to combine any number of audio signals into one, which you could then write to a file.
You could record two audio streams at once, I'm pretty sure, but unless they come from different hardware inputs, they'd be recording exactly the same samples, which would be pointless...
Please, give several examples or links. Hey — is this a test?! No fair, I thought the midterms weren't till next week! O_o
