these are two entirely different skill sets. one of the drawbacks of
iOS apps on the iphone/ipad etc is that its got a lot of people with a
domain-specific knowledge base (or even just an idea) convinced that
they should be able to cook up an app. as simple as Apple's technology
might make it to write some software, it doesn't remove the need to
actually know quite a lot about programming to do something similar to
what the OP proposed. reading books on music and audio theory probably
won't help with this part of the task.
