Actually, according to Apple, there should be no AGC, echo cancellation or
anything of the sort. Using AU, one should be able to get as close to the
raw data as possible. Let's not forget that plugging in an external mic
(thumbtack or earbuds) resolves the issue.

Looks like the usual AGC effect to me. Not sure if there is a way to turn
this off. Using a cell phone for doing measurements like this really is a
bad idea as there is a lot of DSP going on (ambient noise cancellation, AGC,
echo cancellation asf) so the readings will always be more or less tainted.
