limitation (I've also planned to chain hubs to hubs), I'm interested.

The practical upper bound is memory and CPU usage. As long as there is enough of those resources, you should be able to aggregate as many devices as you want.
That said, USB does have a bandwidth ceiling that will limit the number of devices you can attach to one port on the Mac.

For an art installation prototype, I've succesfully and (very easily) managed to aggregate 4 cheap usb soundcards to the built-in one to create a 10 output device.
