Thanks for the suggestion Aran,
The same Sound Font which was playing back in one channel only last week is playing back in stereo now. What changed? The simulator is no longer working with my external audio interface, so I'm listening over the headphone jack.
Previous to my problem fixing it self, I was hearing the sampler presets supplied in the LoadPresetDemo project in stereo, but sound fonts were playing back in one channel. This was all listening via my external audio interface. I'd love to go back today and audition my sound font over my external audio interface, but my app is now crashing (as is the LoadPresetDemo) when I set kAudioUnitProperty_SampleRate when connected to this interface.
I'm experiencing lots of bizarre problems system-wide lately, so I think I'm going to close this issue as "fixed itself" and spend some time hunting the gremlins that seem to be running amuck all over my computer.

Yeah, that had occurred to me as well. If no one chimes in with the "right" way to control pan on the AUSampler I'll give that a try.
