i just went through this myself this past year as i was originally looking to port Csound to iPhone but gave up because i didn't want to deal with the dylib issue and somehow ended up writing my own synth toolkit from scratch -- i was looking mostly at the Dodge/Jerse "Computer Music: Synthesis, Composition and Performance" book and then the Moore "Elements of Computer Music" (which might be out of print?) when i needed more detail. i also have the Roads, but didn't seem too useful in this case.
