Hi Morgan,
We use libpd in all our iOS applications, I think someone is implementing it as an audio unit plug-in as well. PD allows you quickly prototype ideas and is suitable for a flexible, modular system. From experience I can say that it is very easy to get to grips with more complicated synthesis and audio programming once you've gotten over the initial learning bump - although I'm not sure whether it is the right tool for generating graphs.
