Reading and writing from/to sound devices without AU

In my rather specialized audio processing, I may not be able to use Audio Units as I had hoped. If I want to write code that reads samples from an audio input (or non-audio source of streaming data), process them, and write audio samples to an output device like the built-in speaker or headphones (or a file, or all of the above), what is it that I want to look at?
