It's probably also a good idea to check out the realtime time
stretching/pitch shifting example that comes with DiracLE
(--DIRAC3LE--/iPhone-iOS4/DiracRealtimeExampleLE folder contained in
the archive downloadable from http://dirac.dspdimension.com).
I frequently use this example as a starting point for pretty much any
kind of audio app (regardless of the fact whether or not it makes use
of Dirac). It has pretty much everything you need from processing in a
separate thread to reading and writing audio files on iOS (and MacOS
X).
Disclaimer: I am not affiliated with these guys but I am using their
stuff in my products and I like it.
