Trying to 'strip' an AU

Hello, I've been trying to strip my AU of symbols, to do this with a VST version I needed to this this:-

I unchecked 'Strip Linked Product' or a compile error is given.
And I needed to check the 'Use Separate Strip' option, and the 'Symbols Hidden by Default' option.

In the 'Run Script' that copies my plug-in to the VST directory I do this,
-strip -x build/$CONFIGURATION/$PRODUCT_NAME.vst/Contents/MacOS/$PRODUCT_NAM

It was the ONLY way I could get the symbols to be properly strip.

Unfortunately the Audio Unit version was stripped down from ~3Mb to only 67K by JUST the
'Symbols Hidden by Default' checked on. It doesn't run after that, understandably.
Removing that check box, prevented stripping, so I'm stuck.

Can anybody tell me why the AU gets completely stripped and broken by this 'Symbols Hidden' option? And how I can stop it? My 'Target' options are exactly the same as the VST version.
