First, thanks for your answers.
I didn't find any ITunes plugin SDK for audio in the developer resource, only things for vu-meter, graphics, etc ...
Maybe I have to search more.
I already try the soundflower solution (the audio reflector driver), it works fine. But it's a virtual audio device.
I saw that Rogue Amoeba application (Audio Hijacking or Piezo) and some ITunes Audio plugin (SRS iWOW, Bongiovi DPS) are working with a kind of framework called iTea.
It's seems to be developed by Rogue Amoeba, but I don't really know what this framework does exactlty.
