iTunes sample rate question

Hello,
I'm working through the 'Mastered for iTunes' documentation and tools.

I'm wondering why hi-resolution iTunes files have to use a sample rate of 44.1k ?
That does not seem very 'hi-res' to me.
It's not a limitation in the hardware - 48k is always available. Right?
Anyone?
