Thanks. That seems to be exactly what I was looking for. 

I am using the ‘play and record’ category. This is an app where the audio quality is important. I would expect most users to be using headphones, but it should function properly even through the main speaker. I didn’t realize that the play and record category would route to the phone speaker by default.

Which output device (route) are you trying to use and which audio 
session category do you use?

We got caught out because the play and record category on iPhone (only) 
goes to the phone receiver speaker by default, not the usual speaker. 
iPad and iPod Touch don't have that speaker so they don't behave that 
way. (iPhone 3GS doesn't seem to behave that way either, but newer ones 
do.). And if headphones are connected, those are used instead - probably 
Bluetooth, Airplay etc too.

There is an API in AVAudioSession to override it.
