Hi, Sebastian,
Actually I tried. I didn't find that option in TextEdit for
creating/saving a file. But there is an option let you choose the
encoding when you open a file.
Any other ideas?

TextEdit. For plain text you can choose the encodng and one of the
options is UTF-16.
