Before I plunk down the money, those of you familiar with hardware,
etc - should I wait? Is there a new intel processor on the horizon
that is better than the core2duo currently in MacBook pros? I don't
want to end up like I did last time purchasing a CoreDuo machine and
having the core2duo come out two weeks later.

How long do you have on your ADC? It just might be worth it for
you to make your purchase now before it runs out. My Core 2 Duo
Macbook Pro 15" is pretty amazing actually and well worth the
money. I also would be interested in finding out if a quad core
processor or such is in the pipes soon.
There are no quad core portable class processors anytime soon.
The soonest thing is Intel's Santa Rosa platform, which is the next
generation Core 2 Duo:

After Santa Rosa comes Gilo, which could be more than two cores:
http://www.mikeshardware.co.uk/RoadmapQ407.htm#Gilo
Then comes Penryn, based on a 45nm manufacturing process:

The only thing that has any chance of showing up soon is Santa Rosa,
but it isn't going to be a large practical difference from today's
Core 2 Duo.
