But where do we make provisions for using CAC for authentication, unless there is some plugin I need to add to Mail.app. I rather just use Mail.app than Entourage, it's do-able.

Peter,
The easiest way is when adding a new account, select Account Type of
"Exchange" from the Popup when manually setting up a new account.
It will walk you through the process and even has the specific Outlook
Web Access Sever field for your server URL entry.
Note that this method and the "older approach" on Entourage both
required the OWA services which some organizations allowed and others
did not.
