Most HPs have a web console that you can log into (the printer itself
serves it) and you can probably make a change to do default duplex, no
matter what the driver has set. Not sure about the Xerox you've got
though...
In OS X, I've also seen inconsistency with where the duplex option is,
though it's the driver maker's fault and not Apple's. For instance,
on the Ricoh multifunction down the hall, I have to go to the "Layout"
pull-down option. On the HP in my office, there's a "Two Sided
Printing" option in the pull-down box. You may just need to poke
around....
Most of our printers have the web console locked, so instead I just
made the duplex setting change and then saved a printer preset that
had it. By default, OS X will print with the last preset you had.
Since it's the only profile I have (aside from the default "standard"
one) I never have to worry about duplexing.
