SharePoint 2007 is best accessed from a Mac with any browser (Safari,
Firefox, etc) and with Microsoft Office 2008 for Mac. The enterprise version
of Office 2008 has a small application called Microsoft Document Connection
that specifically works with (and only with) SharePoint to allow you to open
Office documents directly from the SharePoint server.
Actually, DC allows you to view, open, lock, check out, check in and upload
Word, Excel, PowerPoint (and maybe more) documents from the SharePoint
server.

Blackboard works with any browser, any platform. (Assuming the Blackboard
you'll be using is the same product I used.)
