I'm with you on this one. I don't see Ive & Co. doing a convertible screen laptop. The screen hinges on the ones I've seen are a bit of a nightmare. They're not the kind of component that will stand up to years of use gracefully.
During the "Lion" portion of the keynote, it appeared that Apple is banking on the multitouch input devices to be the key to navigating future OSes. Besides, a touch-sensitive screen (at least one that Apple would make) is going to be glass. That would add thickness and weight to the MacBook Airs. Also, imagine people sitting there trying to tap on the screen of a 2-pound laptop! It's either going to keep tipping over on heavy-handed folks, or the screen hinge is going to get overly stressed.
As a current MacBook Air owner (which replaced my 12" PowerBook G4), I'm pleased with the direction that Apple has gone. Besides, the big thing here in my mind is the flash storage and crazy low standby power. That's one thing that the current Air is not very long on.

Being that Steve comes from the user experience angle of things, I don't
think it would be the greatest of approaches. Have you ever used a tablet
like that? I've found them to be very cumbersome and it feels like you're
going to snap the screen off at any moment. Not the nice solid tactile
goodness I'm used to out of an Apple machine.
