You have to JB the phone to get to these files. Last time I looked there no untethered jailbreaks yet for iOS 5 and a tethered JB is not worth doing except for investigation... lots of mucking around with bringing it back to non-jailbroken state afterwords. Untethered JB is not a reasonable way to run the iPhone because a reboot means you have to connect to the jail break software to re-enable the phone.
