Too bad SMS isn't... Voice command and speech to text is the one area that I really think iOS lags behind Android.

There is a simpler way on the iPhone 4. Use Voice Command.
Press and hold the Home button until Voice Command prompts you. Then just say, "FaceTime ______ ______." It then immediately starts the FaceTime session.
