You would think Apple Data Protection would just be automatic for every app, it's fairly simple to implement... why wouldn't someone implement it?
I know the NSA can crack a 4 or 6 digit pin pretty easily.... (JUST KIDDING!!) :)

Apple's device is encrypted until you turn it on, then it's decrypted. An added layer of encryption is implemented if two factors are in place: 1) a device passcode is used, and 2) the application uses Apple Data Protection. Apple's Mail is one that does, so simple turning on a passcode (use a 6 character alpha numeric at minimum, best is 8 complex or more) automatically encrypts the underlying data. Good Reader uses ADP, but you have to turn it on in the Good Reader prefs. The list of apps that use ADP is very very small. So, we are looking for a way to edit documents in a program that uses ADP to protect the data. QuickOffice SelectPro HD did this, but Google is discontinuing this version.

Good question.
For those that have not read, the info on "Data Protection" in iOS was presented a couple of years ago at WWDC (can dig up the session video) and is described here:

there are multiple features in "Data Protection" so just saying that an app implements the APIs for Data Protection may not be enough to go on.
