Well, the choices are stark for encryptions options on iOS devices. Good provides FIPS certified encryption for e-mail/calendar and docs, but there is no way to edit the docs and keep the data in a FIPS encrypted container. Heck, at this point I'd accept
any encryption!
Apple's device is encrypted until you turn it on, then it's decrypted. An added layer of encryption is implemented if two factors are in place: 1) a device passcode is used, and 2) the application uses Apple Data Protection. Apple's Mail is one that does,
so simple turning on a passcode (use a 6 character alpha numeric at minimum, best is 8 complex or more) automatically encrypts the underlying data. Good Reader uses ADP, but you have to turn it on in the Good Reader prefs. The list of apps that use ADP is

So, we are looking for a way to edit documents in a program that uses ADP to protect the data. QuickOffice SelectPro HD did this, but Google is discontinuing this version.

Good question.
For those that have not read, the info on "Data Protection" in iOS was presented a couple of years ago at WWDC (can dig up the session video) and is described here:
there are multiple features in "Data Protection" so just saying that an app implements the APIs for Data Protection may not be enough to go on.
