There are several Apple knowledge base articles that may help:
"Using OS X Server's Software Update service with multiple Mac OS X client versions"
http://support.apple.com/kb/HT4069
"OS X Server: Software Update Service compatibility"
http://support.apple.com/kb/HT2794
"OS X Server: About the Software Update service"
http://support.apple.com/kb/HT5383
"Requirements for Software Update Service"
http://support.apple.com/kb/HT3923
"OS X Server: How to cascade Software Update Servers from a Central Software Update Server"
http://support.apple.com/kb/HT3765
Also, even though software updates may now be delivered in the GUI through the Mac App Store, the "softwareupdate" command from the command line is still available and may be used to bring down Apple software updates outside of the Mac App Store.

In working with Mountain Lion, we have discovered that the software update function is configured to go to the Apple store, and we have not found a way to redirect it to our OS X update server.
