What plist does installer.app check for the OS version?

Hi all,
I've heard there is a plist file used by the installer to get the Mac OS X
version.
This came up in the context of fixing our installer for 10.4.10.

Apparently, this file can be edited to fool the installer into thinking
the OS is a different version.
The thought would be we could test the installer by tweaking this file
instead of doing system installs and upgrades.

Does anyone know what file it is??
