One solution could be to have 2 packages and 1 meta-package:

Each package would have an InstallationCheck script that would return an error (64) if the architecture is not the correct one.

You can check the architecture with the arch(1) command line tool.

It would be wise to check which values is returned on a 64-bit Mac.
