Anyone else have any ideas on what we should do at this point?

I would suggest checking out:

/System/Library/Frameworks/CoreServices.framework/Versions/A/ Frameworks/LaunchServices.framework/Versions/A/Support/lsregister

This tool lets you examine what is registered with launchservices, remove something from being registered with launchservices and register a specific application with launchservices.

You should try deleting anything already registered with your signature/bundleid, and then adding your newly build/updated application to it and then see how it appears in the Finder.

This lets you see what your app will look like on a computer that has never seen your computer before.
