But Apple do not officially support this stuff, because it comes under Darwin.

Believe me, I would like to have been more helpful on this matter.
The reason is is considered unsupported is that Apple Network
Engineering deems PAP as unsupported
However, DTS *do* support OS X Server which apparently has some way
of doing what we want to do. On the other hand I found it difficult
to get DTS to give up this information, and I have had to
(temporarily) admit defeat.
DTS does support Mac OS X server, however your statement that it
supported "PAP printing" was interesting as it contradicts a
conversation I had with their print server engineering folks which at
the time, indicated that there was no PAP support. I then took a
look at the Mac OS X feature list and was surprised to show that it
declares:
What printer sharing services are included?
Built-in print services can spool files to any PostScript-capable
printer over TCP/IP, AppleTalk, or USB.
I'm now checking to see whether PAP support was recently implemented.
