I'm forced to work with a Microsoft server LAN, which seems to work fine with gigabit ethernet as long as nothing else is taxing the network, or the server OS isn't going through some unexplained turmoil. I even edit on my PowerMac from projects stored on an internal HD on a network attached G4 at times with no problems. I would think that OS X Server would do fine with minimal hardware. The only absolute need for a fiber-optic XServe, in my opinion, would be if you had more than one editing station working at the same time on your network.
