A careful look at your crash logs may help identify the source of the problem. Make sure you are up to date on all QuickTime and Pro Apps updates. Also make sure you don't have any software conflicts, particularly old plug-ins. Better yet, uninstall all third-party plugins.
Also make sure you have a decent graphics card. The exact model depends on which Mac Pro you have, but basically the middle choice in the custom configurations is the best choice (in other words, not the entry-level one).
