When I've wanted to specify the plugin icon, I've done so by applying a custom icon to the bundle using a target script that runs after the rest of the plugin is built. Here's what I've used. Please note that the source icon is a data fork based resource file containing a 'icns' #-16455 resource.
Steve,
Thanks for the suggestion! That's one way to do it. It turns out that you can also set the "Force Package Info Generation" bit in the project settings, and you'll get a generic icon that doesn't look like a folder. I'll update the Xcode templates and examples (eventually) to do this in the future.
