Mary, thank you for the information but I cannot really use that as a
solution to my problem. I am trying to write a script that our help desk
students can run to do initial setup and AD/OD joins. I don't have the time
to deal with the overhead of creating accounts in advance and the systems
need to work without delay.

Yes, you can do an unauthenticated OD bind and manually configure computer
records in OD.
Go to WGM and create a computer record for the Mac before binding in OD.
Bind the Mac (using the Mac's computer name) without authenticating. You can
just point it to the OD server.
