Dan,
I'm going to send some screen shots of what you should be seeing to your colorado.edu address (I'm not sure we can send attachments on this list).
If you can confirm that you're looking at the correct options and it's not there...then it may be a hardware issue. I believe there's a digital optical cable sensor in the headphone jack area that may cause this problem if it's bad or stuck.
You might try a few things:
1. Open the system pref sound pane, select the Output tab, plug in a set of headphones and see if the option changes. Gently jiggle the cable at the headphones jack and pull it out. Wait a moment and see if the internal speakers option comes up.
2. Reset the PMU - not sure which laptop you're working with but generally, if you shut it down, unplug the power cable, take out the battery, and press the power on button for 5 seconds. Put battery back in and power up and see if the internal speakers show up, now.
