FWIW, the new docs on this were just released:

New Documentation: Java Application Server Administration

WebObjects applications can now be hosted by any servlet or J2EE
container, including the JBoss application server available on
Mac OS X v10.3. This document describes how to configure and use the
JBoss application server in Mac OS X Server.
